2 Loaf Zucchini Bread

Cinnamon, walnuts and zucchini help create 2 delicious loaves of bread that are perfect any time of day with breakfast or with tea.
 

Ingredients

  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 tsp cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cup sugar
  • 3 tsp vanilla
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

Method

Grease and flour two 8 X 4 pans. Preheat oven to 325 degrees. Sift flour, baking powder, baking soda and cinnamon into a bowl. Beat eggs, oil, vanilla and sugar into a large bowl. Add dry ingredients to wet ingredients and beat well. Stir in zucchini and nuts. Pour into pans and bake 40-60 minutes, or until tester entered in center comes out clean. Cool 20 minutes in pan, placed on a rack. Remove from pan and cool completely.
