Almond and Ginger Biscotti

Biscotti is a great and flavorful addition to ice cream desserts or is perfect with your coffee at a weekend brunch.
 

Ingredients

  • 4 tbsp butter, softened
  • 3/4 cup sugar
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1/2 cup toasted slivered almonds, finely chopped
  • 2-1/2 cups Bisquick Original Baking Mix

Method

Heat oven to 375 degrees. Spray baking sheet size 17x14-inches with cooking spray. Place butter and sugar in large bowl, and with wire whisk, cream until light and fluffy. Whisk in eggs, one at a time, then the vanilla and almond flavorings. Add the almonds and ginger. With wooden spoon, gradually add Baking Mix until moist dough forms. Place dough on floured surface. Divide dough evenly into three parts. Place one part of dough on baking sheet and form into log and shape 10-inch long and 1-1/4-inch wide. Repeat with remaining dough. Logs should be 4-inches apart. Bake 20 minutes until lightly browned and wooden pick inserted in center comes out clean. Remove loaves to cooling rack. Lower oven to 325 degrees. When loaves are cool enough to handle, using serrated knife, cut each loaf, on the diagonal, into 1/2-inch thick slices (remove ends). Place slices on sheet; return to oven to bake 16 to 18 minutes turning halfway through baking, until lightly browned. (Biscotti will crisp when cooled). Place Biscotti on rack to cool. Store in airtight container.
