Americana Blueberry Muffins

Blueberries and lemon peel flavor these buttery muffins. After baking the blueberry muffins are brushed with melted butter and sprinkled with a little sugar.
Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1 to 2 cups blueberries
- 1 to 2 tsp grated lemon rind
- 2 Tbsp butter, melted
- 2 Tbsp sugar

Preheat oven to 375 degrees. Cream together butter and sugar until fluffy. Add eggs, one at a time, mixing well. Add vanilla. In a separate bowl, combine the flour, baking powder and salt, and add them alternately with the milk to the batter. Mash about 1/2 cup of the blueberries and add to the mixture, stirring just until blended. Toss the remaining berries with the lemon rind and fold in lightly. Spoon into greased muffin pans and bake at 375 degrees for 20-25 minutes. While still warm, brush each muffin with melted butter and sprinkle lightly with sugar. Cool thoroughly or muffins will crumble.
