Apple Oat Bran Muffins

Whole wheat flour, oat bran and apples make a healthy snack or breakfast on-the-go.
 

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup whole wheat flour
  • 1 cup oat bran
  • 1/2 cup packed brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup fat free mayonnaise
  • 3 eggs
  • 1/2 cup evaporated skim milk
  • 1/3 cup apple juice
  • 2 tsp finely minced candied ginger
  • 1 tsp Chinese 5 spice powder
  • 1 cup shredded apple

Method

Preheat oven to 375 degrees. Line 12 muffin cups with paper liners or spray with cooking oil spray, then set aside. In a medium bowl, mix first 6 ingredients. In a large bowl, mix remaining ingredients. Stir dry ingredients into wet ingredients just until combined. Spoon into prepared muffin cups to 2/3 full. Bake 15-17 minutes or until golden.
