Apple Pumpkin Muffins

Pumpkin and apple are a great autumn combination in this muffin. Use your favorite apple to make what will become your favorite muffin.
 

Ingredients

  • 2 1/2 cups flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 2 eggs
  • 1 cups canned pumpkin
  • 1/2 cup vegetable oil
  • 2 cups finely chopped, peeled tart apple
 
Method

In a large bowl, combine flour, sugar, baking soda, cinnamon, ginger, salt, and nutmeg. In a small bowl, combine eggs, pumpkin, and vegetable oil. Stir wet ingredients into dry ingredients just until moistened. Fold in chopped apples. Fill greased or paper lined muffin cups 2/3 full. Bake at 350 degrees F. for 30 to 35 minutes or until muffins test done. Cool for 5 minutes before removing from the pan.
