Apple Zucchini Bread

This dessert bread makes a great finish to any meal. The combination of apple and zucchini should not be missed.
 

Ingredients

  • 1 3/4 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/8 tsp nutmeg
  • 1/4 tsp salt
  • 1 medium Granny Smith apple, peeled, cored and chopped
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 cup grated zucchini

Method

Heat oven to 350 degrees. Grease and flour a 9 x 5 loaf pan. Whisk flour, baking powder, baking soda, cinnamon, ginger, nutmeg and salt in a medium mixing bowl. Stir in chopped apples. In a separate bowl whisk together, eggs, oil, and sugar. Stir in grated zucchini. Add egg mixture to flour mixture and stir with wooden spoon, just until blended. Do not over mix. Pour batter into prepared loaf pan. Bake for 55-60 minutes or until cake tester inserted in center of loaf comes out clean.
