Apricot Banana Bread

This hearty sweet bread has bananas, apricots and nuts making it a great addition to any breakfast spread.
 

Ingredients

  • 1/3 cup butter, softened
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup mashed ripe bananas (about 2 or 3)
  • 1/4 cup buttermilk
  • 1-1/4 cups all-purpose flour
  • 1 tsps baking powder
  • 1/2 tsps salt
  • 1 cup bran cereal, not flakes
  • 3/4 cup chopped dried apricots
  • 1/2 cup chopped walnuts
  • 1 tsp almond extract
 
Method

In a mixing bowl, cream butter and sugar. Add eggs and vanilla, mixing well. Combine bananas and buttermilk. Combine the flour, baking powder, baking soda and salt. Add to cream mixture alternately with banana mixture. Stir in bran, apricots and nuts. Pour into a greased 9x5x3 loaf pan and bake at 350degrees F. for 55-60 minutes. Cool for 10 minutes before removing from pan to a wire rack.
