Autumn White Chocolate Muffins


Hearty pumpkin muffins with almond flavoring and white chocolate chip--perfect for a fall brunch or dessert.



Ingredients:

  • 1 cup white flour
  • 1/2 cup wheat flour
  • 2/3 cup granulated sugar
  • 1 1/3 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 stick butter, melted
  • 1/2 cup pumpkin
  • 1/4 cup sour cream
  • 2 tablespoons milk
  • Generous splash almond extract
  • 3/4 cup white chocolate chips

Method

Mix first five ingredients in a large bowl. In a separate bowl, mix melted butter, pumpkin, egg, sour cream and almond extract. Pour wet ingredients into dry ingredients and mix until wet. Mix in chocolate chips. Fill buttered muffin tins and bake in preheated 350 degree oven 25 minutes or until lightly browned.

Notes: Can use all white or all wheat flour, but best mixed.
