These muffins are a great addition to brunch as a savory item and are also paired well with soup.
Preheat oven to 425 degrees.
Sift together flour, sugar, baking powder and salt. Stir in cornmeal. Add eggs, milk and oil. Beat until smooth, about 1 minute. Stir in bacon.
Fill greased muffin pans two-thirds full and top with diced tomato. Bake for 20-25 minutes.
