Bacon Tomato Brunch Muffins


These muffins are a great addition to brunch as a savory item and are also paired well with soup.



Ingredients:

  • 1 cup sifted all-purpose flour
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup yellow cornmeal
  • 2 beaten eggs
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 dozen slices bacon, cooked and diced
  • 1 large tomato, seeded and diced

Method

Preheat oven to 425 degrees. Sift together flour, sugar, baking powder and salt. Stir in cornmeal. Add eggs, milk and oil. Beat until smooth, about 1 minute. Stir in bacon. Fill greased muffin pans two-thirds full and top with diced tomato. Bake for 20-25 minutes.
