This wonderful quick bread is made with bananas, cranberries, and a crunchy streusel topping made with butter, brown sugar and oatmeal.Ingredients
- Banana, Cranberry Bread:
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp vanilla
- 1 cup sugar
- 2 eggs beaten
- 1/4 cup butter, melted
- 3 bananas, mashed
- 3/4 cup Ocean Spray cranberries
- Streusel Topping:
- 1/4 cup unsalted butter
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1/2 cup uncooked oatmeal
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1/4 tsp salt

Preheat oven to 350 degrees. Grease and flour a bread pan. Whisk flour, baking soda, salt, cinnamon, nutmeg, and sugar in a mixing bowl. Mix in eggs, vanilla, melted butter and mashed bananas, and stir in cranberries. Pour into baking pan. To make streusel topping, put the butter and sugar in a mixing bowl and beat on medium speed. Add flour, nutmeg, cinnamon,oatmeal and salt. With your fingers work into a crumb like mixture. Now place on top of mixture in loaf pan. Bake until toothpick inserted in the middle comes out clean (approximately 50-60 minutes).
