Banana, Cranberry Bread with Streusel Topping

This wonderful quick bread is made with bananas, cranberries, and a crunchy streusel topping made with butter, brown sugar and oatmeal.
 

Ingredients

  • Banana, Cranberry Bread:
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp vanilla
  • 1 cup sugar
  • 2 eggs beaten
  • 1/4 cup butter, melted
  • 3 bananas, mashed
  • 3/4 cup Ocean Spray cranberries
  • Streusel Topping:
  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup uncooked oatmeal
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Method

Preheat oven to 350 degrees. Grease and flour a bread pan. Whisk flour, baking soda, salt, cinnamon, nutmeg, and sugar in a mixing bowl. Mix in eggs, vanilla, melted butter and mashed bananas, and stir in cranberries. Pour into baking pan. To make streusel topping, put the butter and sugar in a mixing bowl and beat on medium speed. Add flour, nutmeg, cinnamon,oatmeal and salt. With your fingers work into a crumb like mixture. Now place on top of mixture in loaf pan. Bake until toothpick inserted in the middle comes out clean (approximately 50-60 minutes).
