Banana ?Cranberry Nut Bread

This quick bread uses brown and white sugar, unsalted butter, soured half-and-half, and baking soda, plus the mashed banana and chopped cranberries and nuts.
 

Ingredients

  • 1/2 Cup half & half cream
  • 1 1/2 tsp vinegar
  • 1/4 Cup dark brown sugar
  • 1 Cup granulated sugar
  • 1/2 Cup unsalted butter, softened
  • 2 eggs
  • 4 medium, very ripe bananas, mashed
  • 1/2 Cup finely chopped cranberries
  • 1 t vanilla
  • 2-1/2 Cup all-purpose flour
  • 1 t baking soda
  • 1/2 t salt
  • Cinnamon & nutmeg (to taste)
  • 1 Cup chopped nuts

Method

Combine vinegar and cream; set aside. Beat sugars & butter in a large bowl. Add eggs, beating well. Add bananas, cranberries, cream, & vanilla. Beat until smooth. Combine and stir in remaining ingredients, except nuts, until moistened. Stir in nuts. Pour into loaf pan(s), greased or sprayed w/Pam, and bake 1-1/4 hours at 350 degrees or until toothpick comes out clean. Cool 10 minutes. Loosen sides of loaves from pan; remove from pan to rack & cool completely before slicing. (For easier slicing, wrap and store the loaf overnight.)

 

Notes: NOTE: I have rather large loaf pans & this filled one pan + 1 mini-loaf pan.

 

Number of Servings: 1 large loaf
