Bananas and apples are a double delight in these great muffins with a buttery oatmeal-cinnamon topping. A great breakfast treat or after school snack.

  • Servings: 24

3 Extra Ripe Bananas, mashed
1½ cups Sugar
½ cup Oil
3 tsp Milk
2 Eggs
1 Tbsp Vanilla
1 Tbsp Cinnamon
Cups, plus 2 tablespoons flour
1 tsp Baking Soda
1 tsp Salt
1 cup Finely Chopped Apples
Crumble Topping:
½ cup Butter, room temperature
¾ cup Flour
¾ cup Sugar
¾ cup Oats
1 Tbsp Cinnamon

Preheat oven to 375 degrees. Grease 24 muffin pans, or line with paper liners.

Mash the bananas well, until a few lumps remain. Add sugar, oil, milk, eggs, and vanilla. In a separate bowl, stir together cinnamon, flour, baking soda, and salt. Mix into wet mixture. Stir in chopped apples until just blended. Evenly distribute batter among pans. For the crumble topping, stir together all topping ingredients with a fork or with your hands until crumbly. Evenly distribute among the 24 muffins. Bake in the center of the oven for 25-30 minutes, or until golden and firm.
