- Servings: 24
|3||Extra Ripe Bananas, mashed|
|1½||Cups, plus 2 tablespoons flour|
|1 tsp||Baking Soda|
|1 cup||Finely Chopped Apples|
|½ cup||Butter, room temperature|
Preheat oven to 375 degrees. Grease 24 muffin pans, or line with paper liners.
Mash the bananas well, until a few lumps remain. Add sugar, oil, milk, eggs, and vanilla. In a separate bowl, stir together cinnamon, flour, baking soda, and salt. Mix into wet mixture. Stir in chopped apples until just blended. Evenly distribute batter among pans. For the crumble topping, stir together all topping ingredients with a fork or with your hands until crumbly. Evenly distribute among the 24 muffins. Bake in the center of the oven for 25-30 minutes, or until golden and firm.
These are literally a crowd pleaser, ALWAYS. I am always asked for the recipe, and they seem to be a foolproof winner!
