Ingredients:
| ½ cup | Dried Black Mission Figs |
| 2½ cups | Flour |
| 1 tsp | Baking Soda |
| 1 tsp | Cinnamon |
| ½ tsp | Salt |
| ¼ cup | Butter, softened |
| 1 cup | Sugar |
| 2 | Eggs |
| 5 Tbsp | (or 1/3 Cup) Buttermilk |
| 3 | Large Ripe Bananas |
| ½ cup | Walnuts Pieces |
| Sandwich Filling: | |
| ½ cup | Cream Cheese, softened |
Directions:
Simmer dried figs in water to cover for 10 minutes to soften; drain, then chop into small pieces.
For Bread Mix:
Sift together flour, soda, cinnamon and salt. In another bowl, mix together butter, sugar and eggs; stir in buttermilk. In a third bowl, mash bananas; stir in the buttermilk mixture. Gradually stir the flour mix into the banana-buttermilk mix. Add the walnuts and figs. Bake in loaf pan at 350 degrees until an inserted toothpick comes out clean.
Sandwich Assembly:
Slice the banana, fig and walnut bread very thinly. Cut each slice into two or three pieces, as desired. Spread softened cream cheese on one piece of the bread and top with another piece of bread. (The slice used to top the sandwich with should not have cream cheese on it.) Until ready to serve the sandwiches, place on a platter; cover and refrigerate until ready to serve. If not serving the sandwiches until the next day, store in the refrigerator in an airtight container.
