Banana French Toast

Here's an easy way to make French toast in the oven. Butter, brown sugar, banana & bread are layered and the egg-milk mixture goes over all.
 

Ingredients

  • 12 slices of bread, crust cut off
  • 1 stick butter, melted
  • brown sugar
  • 1 banana, sliced
  • 6 large eggs
  • 1 1/2 cups milk
  • 1 teaspoon vanilla
  • Sprinkle cinnamon
  • Pinch nutmeg
  • Maple syrup or powdered sugar (to serve with)

Method

Melt butter and coat bottom of a 9x13" glass baking dish. Sprinkle some brown sugar on top. Slice a banana over brown sugar. Layer 6 slices of bread in bottom. Whisk eggs, vanilla, milk, cinnamon and nutmeg; pour about HALF over bread. Layer rest of bread and pour remaining egg mixture over. Cover with saran wrap and refrigerate overnight. Bake in 350 degree oven for 30 to 40 minutes, until knife comes out clean. Let cool 5 minutes; serve with maple syrup or powdered sugar.

 

Notes: Could also use some blueberries instead of the banana slices.
