Banana-Sour Cream Muffins


Chunks of banana plus chopped nuts (such as walnuts, pecans or macadamias) fill these sweet, orange-flavored sour cream muffins.



Ingredients:

  • 1 cup chopped bananas
  • 1/2 cup nuts, chopped
  • 1/2 cup sour cream or buttermilk
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • Peel of 1 orange, finely shredded
  • 1 tablespoon vanilla
  • 1 tablespoon lilikoi juice or orange juice
  • 2 cups all-purpose flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda

Method

Preheat oven to 350 degrees. Mix bananas and nuts with sour cream or buttermilk; set aside. In large mixing bowl, cream butter with sugar. Add eggs, orange peel, vanilla and lilikoi or orange juice. Stir together dry ingredients; add all at once and stir at low speed just until combined. Fold in banana mixture, being careful not to mash the bananas. Spoon into greased, or paper lined, muffin tins until 2/3 full. Bake about 20-30 minutes or until done.

Number of servings: Makes 12 to 15 muffins
