Bran and whole wheat flour are sweetened nicely by honey in these healthy breakfast muffins.
 

Ingredients

  • 3/4 cup bran
  • 1/3 cup oil
  • 1 cup buttermilk
  • 1/2 cup raisins
  • 1 egg
  • 1/2 shredded carrots
  • 1/3 cup honey
  • 3/4 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp nutmeg
 
Method

Mix first 7 ingredients together and let set 10 minutes. Combine flours, baking soda and nutmeg. Preheat oven to 425 degrees. Line muffin tin with paper liners. Make a well in dry ingredients, add buttermilk and bran mixture then stir to dampen. Batter should be lumpy. Fill muffin tins 2/3 full and bake 15-20 minutes or until toothpick comes out clean.
