Burgers taste better on fresh buns--and nothing could be fresher than baking your own with this simple recipe.

  • Servings: varies by type of roll or bread
  • Prep Time: 20 to 25 minutes
  • Cook Time: 15 minutes
  • Total Time: 2 hours & 40 minutes


¾-1 cup 100 Degree Water
2 Tbsp Butter, softened
1 Large Egg, at room temperature
3½ cups Unbleached, all purpose flour
¼ cup Sugar
1¼ tsp Salt
1 Tbsp Instant Yeast


Mix and knead all of dough ingredients, by mixer or bread machine, to make a soft, smooth dough.

Cover dough and let rise for about one hour, or until doubled in bulk. If using bread machine, let it run full cycle on the dough or manual setting.

Deflate the dough and divide into 8 pieces. Shape each into a round ball, 1 inch thick. Flatten to about 3 inches across. Place buns on a lightly greased baking sheet pan. Cover and let rise for about 1 hour, until very puffy. If desired, brush unbaked buns with melted butter or egg wash (1 egg beaten with 1 tbsp water) and sprinkle with sesame or poppy seeds. Bake buns in a 375 degree oven for 12-15 minutes, until golden. Do not over bake.

Remove from pan as soon as they can be handled, brush with melted butter and cool completely on a rack.

Helpful Tips:

May be made into dinner rolls by dividing dough in half and making 8-9 golf ball size balls of dough for each of 2 pans and baking in greased round cake pans. Because finished product is so soft, it will not stand up to regular size loaves, but it makes fabulous mini loaves. I use King Arthur flour.
