Method

In a large bowl, dissolve yeast in warm water. Lightly beat eggs and pour in enough milk to make 2 cups liquid. Add milk to yeast mixture with butter, salt and sugar then stir until well blended. Mix in 5 cups flour, 1 cup at a time, beating until smooth after each addition until dough becomes stiff. Turn out onto a heavily floured surface and knead until smooth and dough springs back when touched, 5-10 minutes. Kneading should be done with fingertips or ball of hand and should be done gently, but firmly. Place dough into an oiled bowl, turning to coat top as well, and cover with plastic wrap. Let rise in a warm place until almost doubled, 1 1/2-2 hours. Punch down dough and divide into twelve equal portions. Roll each piece into a ball and pinch seam closed. Place seamside down, on greased baking sheet, about 2 or 3-inches apart. Brush oil over tops and cover with plastic wrap. Let rise another 40-60 minutes or until almost doubled. Bake in a preheated 375 degree oven, 20-30 minutes, or until golden and they emit a hollow sound when you give them a light tap. Remove to baking rack to cool.

Notes: You can make smaller rolls, if you choose; just cut the baking time down.
