Big Daddy's Coffee Cake

Part of the dry mixture is used in the batter, and part is reserved to make into the streusel to sprinkle on top of this coffee cake.
Ingredients
- 4 cups all-purpose flour
- 3 cups sugar
- 1 teaspoon salt
- 3 3/4 teaspoons baking powder
- 1 1/4 cup vegetable oil
- 3 large eggs, beaten
- 1 cup milk, preferably whole milk
- 3/4 stick (6 Tbsp.) butter or margarine, cold
- 3 teaspoons cinnamon
- 1 cup walnuts, chopped (optional)
- 3 tablespoons confectioner's sugar

Method
In a large mixing bowl, combine first four ingredients with a fork. Add oil and stir until crumbly. In a medium size mixing bowl, reserve 3 3/4 cups of this mixture for topping. To the original bowl add eggs and milk to make the batter; stir until well blended. Stir in walnuts; pour batter into a greased 15 x 10" baking pan. To the reserved mixture cut in butter and cinnamon. Sprinkle this mixture over cake batter. Bake in a preheated 375 degree oven approximately 40 to 45 minutes or until a knife comes out clean when inserted. Cool about 10 to 15 minutes and sprinkle top with confectioner's sugar.
Notes: You may also add a tablespoon or so of lemon or lime curd alongside the serving of coffee cake for an added tang.
