Biscuit Mix Cappuccino Chocolate Chip Muffins


A package of biscuit mix cuts down on the measuring and prep time for these delicious chocolate and coffee flavored muffins.



Ingredients:

  • 3 tbsp unsalted butter
  • 2-3/4 cups biscuit mix
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1 large egg
  • 6 oz nonfat coffee flavored yogurt
  • 4 oz strong coffee
  • 1/2 tsp pure vanilla extract
  • 1 tbsp instant coffee granules
  • 1 cup semisweet chocolate chips

Method

Have all ingredients at room temperature before starting. Preheat oven to 500 degrees. Prepare standard muffin pans by greasing and flouring or use flour added nonstick cooking spray. Set aside. Microwave butter on high in medium sized bowl until almost melted, about 45 seconds, and set aside. Whisk biscuit mix before spooning lightly into measuring cup and leveling with knife or spatula. Measure dry ingredients, except coffee granules, and half the chocolate chips into large bowl; whisk to combine. Set aside. Whisk egg with now cooled butter until smooth. Add remaining liquids and coffee granules; whisk until well combined and no lumps remain. Make a well in dry ingredients and add liquids all at once, whisking lightly only until barely combined. Don't worry about lumps, batter does not need to be smooth. Fill muffin cups with 1/4 cup batter. Batter should come almost to top but not over. Divide remaining chocolate chips among muffins and press into tops lightly. Place in oven and immediately reduce temperature to 400 degrees for shiny pans, 375 degrees for dark and coated pans. Bake about 14-17 minutes, or until muffins are done. A toothpick inserted in center should come out with just a few crumbs. Let muffins cool in pan for 5 minutes. After 5 minutes, muffins should easily release and should finish cooling out of pan on racks.

Notes: These muffins are also a nice easy dessert or snack. They are good any time. They are wonderful warm or at room temperature.
