Bishop's Colonial Bread

This quick bread is loaded with goodies-oatmeal, chocolate chips, raisins, Craisins and chooped pecans.
 

Ingredients

  • 1 cup whole milk
  • 1 Tbsp vinegar
  • 1 cup sifted flour
  • 1/3 cup sugar
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 cup uncooked oatmeal
  • 1/3 cup semi-sweet chocolate bits
  • 1 cup golden raisins
  • 1/2 cup "Craisins" (dried sweetened cranberries) or, chopped candied red cherries
  • 1/2 cup chopped pecans (or almonds)
  • 1/2 cup vegetable oil
  • 1 beaten egg
  • 1 tsp vanilla

Method

Preheat oven to 325 degrees. Combine milk with the vinegar and set aside. In a separate bowl, sift together flour, sugar, salt and baking soda. Add oatmeal, chocolate, raisins, Craisins (or cherries), and nuts; stir to coat evenly. Into the dry ingredients, add the milk-vinegar mixture, oil, beaten egg and vanilla. Stir only to moisten dry ingredients. Pour into a greased and wax-papered (or parchment paper) meatloaf pan. Bake for 60 to 65 minutes. Cool on wire rack and remove from pan after about 10 minutes.

 

Notes: This bread is best when not sliced until the next day.
