Blueberry Apple Pecan Oat Muffins

These hearty muffins are loaded with fiber, apples and blueberries--a healthy and delicious breakfast or snack.
Ingredients
- 1 1/2 cups flour
- 3/4 cup sugar
- 1/2 cup quick cooking oats
- 1/4 cup toasted wheat germ
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh or frozen blueberries
- 1 cup diced and peeled apple
- 1/2 cup chopped, toasted pecans
- 1 cup buttermilk
- 1 egg
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract

Preheat oven to 350 degrees and grease muffin cups or line with paper liners. In a large bowl, mix flour, sugar, oats, wheat germ, baking powder, baking soda and salt. Gently fold in blueberries, apple and pecans. In another bowl, whisk buttermilk, egg, oil and vanilla. Stir into dry ingredients just until blended. Divide batter evenly between muffin cups and bake 15-20 minutes or until tester comes out clean. Transfer to a wire rack and cool in pan for 5 minutes; turn out and cool completely.
Notes: These are packed with good nutrition from all the fruit, oats and nuts. But they're so delicious that no one will know they're healthy. A great way to get fruit and fiber into the tummies of picky eaters. I take them to work with me for a morning snack, and they keep me going all morning.
