Blueberry-Banana Oat Bread

A healthy and tasty quick bread--just mix in one bowl and bake.

Ingredients
  • 1 1/2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 3/4 cup oatmeal
  • 1/3 cup vegetable oil
  • 2 large eggs, slightly beaten
  • 1 cup mashed ripe bananas
  • 2 Tablespoons lemon juice
  • 1 Tablespoon grated lemon rind
  • 3/4 cup fresh or frozen blueberries (if using frozen berries, thaw and drain)
 
Method

Preheat oven to 350 degrees. Spray a 9 1/2 x 5-inch loaf pan with PAM. Combine flour, sugar, salt and baking powder together in a large mixing bowl. Add oatmeal, oil, eggs, bananas, lemon juice and lemon rind. Mix just until ingredients are moistened. Do not over mix. Gently fold in blueberries. Turn batter into prepared pan and bake for one hour at 350 degrees. Cool in pan for 30 minutes. Turn out onto a rack and completely cool before slicing.

 
Notes:

This bread is so good with softened cream cheese spread on slices. Taste better if left to cool for a couple of hours. Bread freezes well.
