Blueberry Bread Pudding and Brown Sugar Sauce

This warm dessert is perfect for a fall evening or for the dead of winter. Try this blueberry goodness with a scoop of rich vanilla ice cream.
 

Ingredients

  • 14 slices dense style white bread
  • 6 large eggs
  • 1 cup light cream
  • 1 1/2 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3/4 cup brown sugar + 1/3 cup for topping
  • 3/4 tsp salt
  • 1 1/2 cup blueberries
  • 4 tbsp butter
  • Sauce:
  • 1 1/2 cup blueberries
  • 2/3 cup brown sugar
  • 2 tbsp flour (to thicken)

Method

Cut bread into cubes (1/2 to 1 inch squares) and set aside. Beat eggs and add cream, vanilla, brown sugar, salt, cinnamon and nutmeg and mix thoroughly. Add cubed bread and blueberries, mixing gently so the bread does not turn to mush. Spread mixture into a greased 9x13 baking dish and dot with 4 tbsp of butter and sprinkle with remaining brown sugar. Bake in water bath at 350 degrees for 55-65 minutes. Until slightly firm in center. Sauce: In medium sauce pan mix reserved berries and brown sugar over medium heat until boiling. Sprinkle flour in, stirring constantly until thickened. Serve pudding warm and ladle sauce over individual bowls.
