
This healthy recipe for jumbo muffins combines bananas and blueberries in a batter with whole wheat flour, rolled oats, wheat and oat brans, skim milk, cinnamon and vanilla, but has no added sugar or egg yolks.
Preheat oven 350. Spray jumbo muffin pans well with nonstick spray. Blend well the bananas, egg whites, milk and vanilla in a medium bowl. Stir together flour, oats, brans, baking powder, baking soda, and cinnamon in a separate bowl. Mix dry ingredients with wet ingredients (do not overmix). Gently fold in blueberries. Spoon into muffin tins to 2/3 full. Bake 20 to 25 minutes or until done.

Very healthy an easy breakfast to eat at the office. With the addition of bananas, blueberries, and other flavors you will not miss the sugar in this recipe.
