Bourbon and blueberry really compliment each other in this otherwise traditional muffin recipe. The real topper is the warm maple syrup.
Preheat oven to 425 degrees. Line 12 muffin cups with paper liners. In a medium sized mixing bowl, sift two cups flour, sugar, baking powder, and salt. In a separate smaller bowl, combine milk, buttermilk, vanilla, egg, bourbon and melted butter. Make a well in center of dry ingredients and pour in liquid mixture. Stir just until all dry ingredients are moistened and incorporated, but do not over mix. In a small bowl, toss frozen berries with remaining 3 tbsp flour. Quickly and briefly mix berries into batter. Fill muffin cups about 2/3 full. Bake for about 20 minutes, or until muffins are lightly browned on top and a toothpick inserted in the middle comes out almost clean.
Notes:
These muffins are best served warm with a spread or drizzle of fresh maple syrup.
