Bran Molasses Muffins

These muffins combine the flavors of whole bran cereal and molasses, and add dates for extra sweetness.
Ingredients
- 2 cups All-Bran cereal
- 1/4 cup molasses
- 1 1/4 cups milk
- 1 beaten egg
- 1/2 teaspoon vanilla
- 1 cup flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup chopped dates

Method
Preheat oven to 375 degrees. Mix bran, molasses, milk, beaten egg and vanilla together until well blended. In separate bowl combine flour, salt, baking soda, baking powder and chopped dates. Stir together dry ingredients and the bran mixture. (If mixture seems stiff, stir in a little additional milk.) Fill paper-lined muffins pans about 2/3 full and bake for 20 minutes, or until done.
Notes: I bring these nutritious muffins with me to work. I spread the muffin with softened cream cheese and enjoy it with a cup of soup. These muffins are a satifying, healthy accompaniment to any meal.
