Bread Machine Pita Pockets

Make your own pita bread, but let the bread machine do the work of mixing and kneading. This basic dough contains flour, oil, and a little sugar.
 

Ingredients

  • 1 1/8 cup warm water (1 cup plus 2 Tbsp.)
  • 3 cups flour
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons yeast

Method

Place all ingredients in bread pan according to manufacturer's recommendation; select dough setting. Turn finished dough out onto a lightly floured surface and divide into 8 pieces. Form each into a ball; let rest a few minutes, and with a rolling pin roll each to a 6- to 7-inch circle. Cover with a towel and let rise for 30 minutes. Preheat oven to 500F. Place 2 or 3 pitas on baking sheet or directly on oven rack. Bake for 4-5 minutes until puffed and golden. Remove from oven and immediately place in a sealed brown paper bag, or cover with a damp kitchen towel until soft. Once softened, you may split and fill pitas. Store in a plastic bag in the refrigerator or freeze up to 2 months.

 

Notes: This easy, no-fail recipe makes the dough in the bread machine. All you have to do is shape and bake.
