Bread Pakoda

A mashed potato and chilies filling is seasoned with spices & spread between bread slices. It's quartered, dipped in a batter then deep fried.
Ingredients
- 1 cup plus 5-6 tbsp Graham (whole wheat) flour
- Water
- Salt to taste
- 1 tsp red chili powder
- Oil for frying
- 1/4 tsp cumin seeds
- 1 sprig Fresh Curry Leaves
- 4 Green Chilies, chopped
- 1 Boiled Potato (mashed)
- 1/2 tsp Turmeric Powder
- Salt to taste
- 4 Bread slices

Method
Stir the flour and add a little water, chili powder and salt to it, and mix into a batter. Set aside. Heat a little of the oil in a pan. Add cumin seeds; allow it to crackle, then add curry leaves and finely chopped green chilies; stir. Now add boiled and mashed potato to it; add turmeric powder and salt; mix well. Simmer for 2 minutes. Remove from heat. Take the bread slices and spread one slice of bread with potato filling; cover with other slice of bread; cut this into four equal squares. Dip squares in the batter and deep fry in oil till it becomes light brown in color.
Notes: Don't fry on very high heat; the bread will not cook well and will be burnt.
