Ingredients:
2 cups | Flour |
2 tsp | Baking Powder |
¾ tsp | Salt |
½ tsp | Baking Soda |
1 cup | Sugar |
½ cup | Butter |
2 | Eggs |
5 | Medium or 4 Large Bananas-mashed |
1 cup | Chopped Walnuts, optional |
1 tsp | Lemon Juice |
1 tsp | Vanilla Extract |
2-3 tsp | Extra Sugar, for top of bread |
Directions:
Cream butter and sugar in a large bowl. Add eggs and mix well. Add lemon juice and vanilla-mix. Add mashed bananas then dry ingredients amd mix just till combined. Pour mixture into a loaf pan. Sprinkle the extra sugar over the top of the bread just before baking. Bake in a loaf pan at 350 degrees for 1 1/4 hours.
Helpful Tips:
It's important not to over mix quick breads to make sure they'll stay nice and tender. This recipe can also be used for muffins or smaller loaves. Adjust the baking time accordingly.
