Broccoli Cheese Cornbread

A packaged corn muffin mix is helped with the addition of cottage cheese, onion, butter, eggs, and frozen chopped broccoli, before being baked and cut into squares.
 

Ingredients

  • 1 (8.5 ounce) box corn muffin mix
  • 1/2 teaspoon salt
  • 4 eggs, beaten
  • 1 cup cottage cheese
  • 1 medium onion, finely chopped
  • 1/2 cup butter, melted
  • 1 package frozen chopped broccoli, thawed and drained

Method

Preheat oven to 400 degrees. Lightly grease an 11x7-inch baking pan. In a large mixing bowl, combine corn muffin mix and salt. In a separate bowl mix together eggs, cottage cheese, onion, and butter. Stir the egg mixture into the corn muffin mix. Fold in broccoli. Pour batter into prepared pan. Bake in preheated oven for 30 minutes, or until a toothpick inserted into the center of the pan comes out clean. Cut into squares.

 

Notes: This is good for breakfast, lunch, dinner, a side dish or a snack. It's good hot, cold, or room temperature. Individual squares reheat in microwave nicely.
