Brown Sugar Muffins
These muffins contain flour, brown sugar, butter, eggs, evaporated milk, vanilla, and baking powder. The batter is spooned into muffin cups that are coated with granulated sugar to make them extra sweet.
Ingredients
- 4 cups all-purpose flour
- 1 tbsp. baking powder
- 1/2 tsp. salt
- 1 1/2 cups brown sugar
- 2/3 cup cold butter
- 4 eggs, beaten
- 1 tbsp. vanilla
- 1 cup evaporated milk
- Nonstick Cooking Spray
- Granulated sugar

Method
Heat oven to 375 degrees. In large mixing bowl, mix thoroughly the first four ingredients. Cut butter into flour mixture. In small bowl, mix eggs, vanilla and milk; stir into flour-butter mixture. Spray muffin cups with coating and sprinkle with granulated sugar. Scoop 1/4 cup of batter into each muffin cup. Bake about 20 to 25 minutes or until golden brown and muffin tests done.
Notes: Serve with strawberries and sweetened whipped cream, if you wish.
