These blueberry muffins are hearty, healthy and bursting with flavor.
Heat oven to 375 degrees. In a large mixing bowl combine the two flours with the cornmeal, salt, baking soda and pepper. In a separate bowl, whisk together the egg, molasses, brown sugar, apple juice, buttermilk, and lemon juice. Stir into the flour mixture and mix until smooth. Stir in the blueberries and fill a greased (12 count) muffin tin. Bake for 20 minutes.
Notes:
Serve with apple butter, pumpkin butter or whipped cream cheese.
