Brown Bread Buttermilk Blueberry Muffins


These blueberry muffins are hearty, healthy and bursting with flavor.



Ingredients:

  • 1/2 cup whole wheat flour
  • 1/2 cup rye flour
  • 1/2 cup fine cornmeal
  • 1 1/2 tsp baking soda
  • 1 tsp fine sea salt
  • 1/4 tsp ground red pepper
  • 1 large whole egg, slightly beaten
  • 1/3 cup dark molasses
  • 1/3 cup dark brown sugar, packed
  • 1/3 cup apple juice
  • 1 cup buttermilk
  • 1 tsp fresh lemon juice
  • 1/4 tsp freshly grated nutmeg
  • 1 cup moist, dried sour blueberries

Method

Heat oven to 375 degrees. In a large mixing bowl combine the two flours with the cornmeal, salt, baking soda and pepper. In a separate bowl, whisk together the egg, molasses, brown sugar, apple juice, buttermilk, and lemon juice. Stir into the flour mixture and mix until smooth. Stir in the blueberries and fill a greased (12 count) muffin tin. Bake for 20 minutes.

Notes: Serve with apple butter, pumpkin butter or whipped cream cheese.
