Buttermilk Date Spice Muffins

These muffins are hearty and great for breakfast. The dates are the perfect consistency to really wake you up and get you moving.
 

Ingredients

  • 3 cups all purpose flour, divided
  • 1 1/2 cups light brown sugar, packed
  • 3/4 cup butter
  • 3/4 cup chopped dates
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 cup buttermilk
  • 2 large eggs
 
Method

Spray 18 muffin cups thoroughly with a nonstick cooking spray. Preheat oven to 375 degrees. In a large mixing bowl, place 2 cups flour with brown sugar. Cut in butter until mixture resembles a coarse meal. Reserve 3/4 cup mixture for topping. To remaining mixture, add remaining cup flour, baking powder, baking soda, salt, nutmeg and cinnamon. Add buttermilk and eggs, stirring until just moistened. Do not over stir. Fold in dates. Spoon batter into prepared muffin cups until about half full. Sprinkle each muffin with 1 1/2 teaspoons reserved topping. Bake at 375 degrees for 20 minutes. Remove from oven and remove from pan to rack with a spatula or knife. Serve hot.
