Buttermilk Pound Loaf

Buttermilk Pound Loaf


1 stick Unsalted Butter, room temperature
1⅔ cups Sugar
3 Eggs
1½ cups Flour
½ tsp Baking Soda
½ tsp Salt
½ cup Buttermilk
¼ tsp Vanilla Extract
9 X 5" Loaf Pan, greased and dusted with flour


Preheat oven to 325. Put butter and sugar in mixer and cream until light and fluffy. Add eggs, one at a time, mixing well and scraping any unmixed ingredients from side of bowl with rubber spatula after each addition. sift flour, baking soda, and salt into another bowl. Add one third of the flour mixture to the butter mixture, followed by half the buttermilk. Mix well. Repeat this process, then finish with remaining flour mixture. Stir in the vanilla. Mix well until all ingredients are mixed. Pour batter into prepared loaf pan and smooth over with palette knife. Bake in preheated oven for 35 to 40 minutes, or until golden brown and cake bounces back when touched. let cake cool slightly in pan before turning out onto a wire rack to cool completely. Here's a reliable, traditional pound cake recipe....moist with butter and not too sweet. You can add chocolate chips, nuts or berries to the cake batter as an alternative.
