Butternut Squash Sweet Bread

This sweet, quick bread contains mashed butternut squash, plus cream cheese, sour cream, molasses and spices. Add raisins to the batter, if you wish.
Ingredients
- 4 oz cream cheese
- 3 tbls butter
- 1/2 cup sour cream
- 2 Cups Sugar
- 1 Tbls Molasses
- 1/2 tsp vanilla extract
- 2 Cups Cooked and Mashed Butternut Squash
- 4 Eggs
- 3 1/2 Cups Flour
- 2 tsp Baking Soda
- 1 tsp salt
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/8 tsp black pepper
- 1 cup raisins (optional)

Method
Cream butter, sour cream, and cream cheese in bowl. Add sugar, molasses, and vanilla; combine well. Add squash. Add eggs; beat until smooth. In medium bowl combine flour, soda, salt and spices; add to wet ingredients, stirring just until smooth. Fold in raisins, if using. Pour into two greased loaf pans and bake for 1 1/2 hours or until toothpick inserted comes out clean.
