California Cinnamon Rolls

You'll save a great deal of time when you let your bread machine do the hard work for these moist and tender sweet rolls.
 

Ingredients

  • 1/2 cup warm water
  • 1/2 cup butter or margarine, melted
  • 1 package vanilla pudding mix
  • 2 egg, room temperature
  • 2 cups warm milk
  • 2 tbsp white sugar
  • 1 tsp salt
  • 8 cups whole wheat or white flour
  • 2 packages active dry yeast
  • Filling:
  • 1/2 cup butter, softened not melted
  • 1 1/2 cups brown sugar
  • 3 tbsp ground cinnamon
  • 1/2 cups chopped pecans, optional
  • Glaze:
  • 1 8 ounce package cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups confectioners sugar
  • 1 tsp vanilla extract
  • 1 tbsp milk

Method

In the pan of bread machine, combine water, butter, vanilla pudding, milk, egg, 1 tablespoon sugar, salt, flour and yeast. Set machine to dough cycle and start. When cycle has finished, turn dough out onto a lightly floured surface and roll into two 17 x 10 inch rectangles. Spread with softened butter. In a small bowl, stir together brown sugar, cinnamon and pecans. Sprinkle brown sugar mixture over dough. Roll up dough, beginning with long side. Slice each roll into 16 one inch slices and place in 9 x 13 buttered pan. Let rise in a warm place until doubled, about 45 minutes. Meanwhile, preheat oven to 350 degrees. Bake for 15-20 minutes. While rolls are baking, stir together cream cheese, softened butter, confectioners sugar, vanilla and milk. Remove rolls from oven and top with frosting.

 

Notes: Make sure that your cinnamon is not bland to prevent your rolls from being dull.
