Caramelized Bananas Foster Bread No 2

Ingredients:
| 2 | Medium Firm Bananas, peeled |
| 1 Tbsp | Butter |
| 6 Tbsp | Light Brown Sugar |
| ¼ cup | Freshly Squeezed Orange Juice |
| ⅛ tsp | Cinnamon |
| 1 cup | All Purpose Flour |
| ½ cup | Whole Wheat Flour |
| ½ cup | Cornmeal |
| 2 tsp | Baking Powder |
| ½ tsp | Salt |
| Fresh Ground Pepper, to taste | |
| 3 | Large Eggs, lightly beaten |
| ½ cup | Buttermilk |
| 1 Tbsp | Butter, melted |
| 1 Tbsp | Honey |
| 2 cups | Coarsely Mashed Caramelized Bananas Foster |
Directions:
First prepare your caramelized bananas by cutting the bananas in half lengthwise. Melt butter in a nonstick skillet over medium high heat. Add brown sugar and lay the banana slices on top, cut side up. Cook undisturbed for 20 seconds, then add rum, or orange juice, and cinnamon. Cook for 10 seconds, then turn bananas carefully and cook for 45-60 seconds more, basting with the pan sauce. Preheat oven to 425 degrees. Place a 9 inch iron skillet in the oven to heat.
Whisk the flour, whole wheat flour, cornmeal, baking powder, salt, and pepper in a large mixing bowl. Whisk the eggs, buttermilk, butter, and honey in a medium bowl, then add the egg mixture to the dry ingredients. Preferably mix with a rubber spatula. Stir in the coarsely mashed Bananas Foster. Remove the hot skillet from the oven and coat it with cooking spray. Pour in the batter, spreading evenly. Bake the bread until golden brown and a toothpick inserted into the center comes out clean, 20-25 minutes.
