These otherwise traditional muffins have crystallized ginger and cardamom powder added to the list of ingredients.
Preheat the oven to 350 F. Lightly grease a 12-muffin baking pan or line with muffin cups. Cream together the sugar, butter and eggs until well blended. Add the mashed bananas, vanilla, cardamom and chopped ginger. Add the flour gradually and stir in half the chopped nuts.
Divide the batter into muffins cups and top with remaining nuts, pressing them lightly into batter.
Bake for 25-30 minutes or until the tester comes out clean. Remove from muffin pan and cool on rack.
