Cardamom-Ginger Banana Nut Muffins


These otherwise traditional muffins have crystallized ginger and cardamom powder added to the list of ingredients.



Ingredients:

  • 3/4 cup butter
  • 1 cup light brown sugar
  • 3 eggs
  • 3 medium or 4 small ripe mashed bananas
  • 1/2 tsp vanilla
  • 1 tsp cardamom powder
  • 1/4 cup chopped crystallized ginger
  • 2 cups self-rising flour
  • 1 cup chopped pecans or walnuts, separated in half

Method

Preheat the oven to 350 F. Lightly grease a 12-muffin baking pan or line with muffin cups. Cream together the sugar, butter and eggs until well blended. Add the mashed bananas, vanilla, cardamom and chopped ginger. Add the flour gradually and stir in half the chopped nuts. Divide the batter into muffins cups and top with remaining nuts, pressing them lightly into batter. Bake for 25-30 minutes or until the tester comes out clean. Remove from muffin pan and cool on rack.

Notes: Deliciously different!
