Carrot Bread

Your family will never know they're eating something healthy when they enjoy this bread loaded with carrots, raisins and chopped nuts.
Ingredients
- 1 1/2 cups flour
- 2 tsp double-acting baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 2/3 cup butter
- 1 cup sugar
- 1 cup finely grated carrots
- 1 cup seedless raisins
- 1/2 cup chopped nuts
- 2 eggs

Method
Stir together flour, baking powder, cinnamon and salt. Set aside. In a separate bowl blend sugar and butter. Beat in eggs. Add flour mixture and stir well. Mix carrots, nuts, and raisins and stir into batter. Pour into well greased and lightly floured 9 X 5 X 3 inch loaf pan. Bake in 350 degree oven for 1 hour. Cool 10 minutes in pan, then remove. Place on wire rack to finish cooling.
