Cheesy-Sweet Corn Bread

1 cup All-purpose Flour
1 cup Yellow Cornmeal
¼ cup Sugar
2½ tsp Baking Powder
¼ tsp Salt
¼ tsp Baking Soda
1 cup Buttermilk
1 cup Shredded Cheddar Cheese, 4 oz.
½ cup Finely Shredded Parmesan Cheese, 2 oz.
3 Tbsp Butter, melted
3 Tbsp Cooking Oil


Preheat oven to 400 F. Grease and lightly flour 9x1 1/2-inch round baking pan; set aside.

In large bowl stir together flour, cornmeal, sugar, baking powder, salt, and baking soda; set aside. In medium bowl stir together egg, buttermilk, 3/4 cup cheddar cheese, 1/4 cup Parmesan cheese, butter, and oil. Add buttermilk mixture to flour mixture and stir just until moistened. Spread evenly in prepared pan.

Bake 25 minutes. Sprinkle with remaining cheeses and bake 5 minutes more or until golden and wooden toothpick inserted in center comes out clean. Serve warm.
