Cherry Nut Bread

This loaf of bread is simple to make and is a great addition to most teas and coffees.
 

Ingredients

  • 3 cups all purpose flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 beaten egg
  • 1 2/3 cups milk
  • 1/4 cup cooking oil
  • 3/4 cup chopped nuts (walnuts, or pecans or choice)
  • 1 cup maraschino cherries; drained, chopped, rinsed (reserve 1 tsp juice)

Method

In a mixing bowl, stir flour, sugar, baking powder, salt and baking soda together, set aside. In another bowl, combine egg, milk, cooking oil and cherry juice. Add flour mixture and stir until well combined. Add nuts and gently stir in cherries. Place into a greased 9 x 5 x 3 loaf pan and bake at 350 degrees for 1 hour 15 minutes.

 

Notes: I like to use an electric mixer. All ingredients can be mixed until you add the cherries, then gently stir in with a spoon otherwise your bread will be pink.

 

Number of Servings: 1 loaf (approx 12 slices)
