Chewy Apple Squares

These chewy apple squares make a great fall treat. What a great ending to a trip to an apple farm.
Ingredients
- 1 cup flour
- 1 tsp baking powder
- 1/8 tsp salt
- 1/4 cup butter
- 1/2 cup brown sugar
- 1 cup granulated sugar, divided
- 1 egg
- 1 1/4 tsp vanilla
- 3/4 cup apple, peeled, pared and chopped
- 1 1/2 tsp cinnamon
- Vanilla ice cream or whipped cream, if desired

Method
Preheat oven to 350 degrees. Combine flour, baking powder and salt then set aside. Combine 1/2 cup granulated sugar and cinnamon in small bowl and set aside. Melt butter in a medium saucepan. When melted, remove from heat and beat in brown sugar, remaining granulated sugar, egg and vanilla then beat until smooth. Add flour mixture and stir well. Stir in apples and spread into a greased 8 X 8 pan. Sprinkle 1 tablespoon cinnamon sugar on top and bake 30 minutes. Cool completely in pan, then cut into squares. Serve with ice cream or whipped cream, if desired.
Notes: These are very chewy and absolutely delicious.
