Chili Cheddar Corn Loaf

Corn bread with a twist--colorful vegetables and Cheddar cheese.
Ingredients
- 1/3 lb bacon
- 1 1/2 cups flour
- 1/2 cup yellow cornmeal
- 2 tsp baking powder
- 1/2 tsp coarse salt
- 1 1/2 cups extra sharp cheddar cheese, shredded
- 1/4 cup roasted red pepper, drained and chopped
- 1/2 cup sliced green onion
- 1 cup canned cream style corn
- 1 4 oz can chopped green chilies, drained
- 3/4 cup whole milk
- 1/4 cup unsalted butter, melted and cooled
- 2 eggs, slightly beaten

Method
Cook bacon in a 12 inch skillet, over medium heat, until crisp. Remove and reserve 2 tbsp drippings. Drain and crumble bacon then set aside. Combine flour, cornmeal, baking powder and salt in a large mixing bowl. Make a well in center. Combine bacon, drippings, roasted red pepper, cheese and remaining ingredients. Add this to dry ingredients well and stir just until dry ingredients are moistened. Spoon batter into a greased and floured loaf pan. Bake in a 350 degree oven for 65 minutes or until golden. Remove from oven and cool in pan 10 minutes. Remove loaf from pan and cool completely on a wire rack. Cut into 1 inch slices.
Notes: A great way to combine very tasty ingredients and a different way to present. Everyone loves this one.
