Chocolate Chip Coffee Cake

This coffee cake batter contains whole wheat flour, white flour, and flaxseed meal, in addition to chocolate chips. A pecan-almond topper goes over all.
 

Ingredients

  • Cake:
  • 1 3/4 cup white flour
  • 1/4 cup whole wheat flour
  • 1/4 cup flaxseed meal
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1/3 cup softened butter
  • 1 tsp vanilla extract
  • 2 eggs
  • 3/4 cup milk
  • 1 cup semisweet chocolate chips
  • Topping:
  • 1/3 cup brown sugar
  • 1 Tbsp flour
  • 2 Tbsp softened butter
  • 1/2 cup chopped pecans
  • 1/4 cup slivered almonds

Method

Preheat oven to 350 degrees. Grease a 13x9" baking pan. Combine dry ingredients in a small bowl. In a large bowl with electric mixer, beat sugar, butter, and vanilla. Add eggs one at a time, mixing after each is added. Gradually add the dry ingredients alternately with milk. If mix seems too dry, add extra milk as needed. Fold in chocolate chips; pour into pan. For Topper: In your food processor, combine brown sugar, flour, butter and pecans until crumbly. Sprinkle on top of cake mixture in pan. Sprinkle almonds on top of that. Bake about 30 to 35 minutes, until sides start to pull away from pan. Cool on wire rack before serving.
