Chocolate Muffins with Nutty Cream Cheese

These delicious chocolate muffins are filled with a nutty cream cheese. These are a great addition to brunch or make a great dessert.
 

Ingredients

  • 8 oz brick cream cheese
  • 1/2 cup confectioner's sugar
  • 1 teaspoon vanilla
  • 1/2 cup finely chopped walnuts
  • 3/4 cup unsweetened cocoa powder
  • 1 1/4 cups all purpose flour
  • 1/2 cup whole wheat flour
  • 1 1/4 cups packed, light brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 2 large eggs
  • 1 cup milk
  • 2 teaspoons vanilla
  • 2 teaspoons vinegar
  • 1 stick butter, melted
  • Confectioner's sugar for sprinkling if desired

Method

Heat oven to 350 degrees. Lightly spray a 12 cup muffin pan with nonstick cooking spray. In medium bowl, beat together cream cheese, 1/2 cup confectioner's sugar and 1 teaspoon vanilla until smooth. Stir in chopped nuts and set aside. In large bowl, mix together cocoa, flours, brown sugar, baking powder, baking soda, salt and chocolate chips. In a medium bowl, whisk together eggs, milk, 2 teaspoons vanilla and vinegar. Add wet ingredients to dry ingredients, along with the melted butter, stirring to blend until well combined. Fill muffin cups 1/3 full. Drop an equal amount of cheese mixture in center of each cup. Divide remainder of batter equally between cups, covering cheese completely. Bake 20-25 minutes or until top springs back when lightly touched. Be careful not to over bake. Remove from oven and let sit in pan 5 minutes before removing and placing on a wire rack to finish cooling. Sprinkle with confectioner's sugar if desired. Store leftovers in refrigerator.
