These muffins make a better dessert than a breakfast item. The surprise is yummy coconut flakes, peanut butter, and pumpkin puree.
In large bowl combine first four ingredients. In a small bowl, beat egg, milk and oil. Stir into dry ingredients just to combine, do not over mix. Fold in chocolate chips and 1/2 cup coconut flakes. Fill muffin cups halfway and with half of them place 1/2 tsp pumpkin puree, and other half 1/2 tsp peanut butter. Then fill the rest of way with batter. Top off with remaining coconut flakes. Bake at 400 degrees for 18-20 minutes. Muffins are done when you tap on the top and it springs back at you. Cool for 5 minutes before removing to a wire rack.
