Chocolatety Chip Muffins

This butter, sugar, flour and egg batter has chocolate chips folded in and is baked in muffin cups.
 

Ingredients

  • 1/3 lb. butter, softened
  • 1/2 tsp vanilla extract
  • 4 medium eggs
  • 1 cup sugar
  • 1/4 cup milk
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 1/2 cups flour
  • 12 oz. chocolate chips

Method

Preheat oven to 400 degrees; butter a muffin pan. Beat butter and vanilla extract together to form a light, airy mixture. One at a time, add eggs and 1/4 cup sugar after each egg, making sure to mix thoroughly. Add baking powder and salt to milk, then add to mixture. Fold in flour and chocolate chips. Pour mixture into muffin pans, filling each cup 2/3 full. Bake about 25 minutes or until muffins turn golden brown.

 

Notes: You could substitute rasins or nuts for the chocolate chips, or any other thing you like. Be creative.
