Coconut Bread - (Coconut Flour)

This is the type of bread some who are on Low-Carb diets favor. Breads with only coconut flour has extra eggs added. added 3/2011 - A Monthly Bread

  • Cook Time: 35 minutes in glass dish
  • Total Time: 45 minutes


½ cup Sifted Coconut Flour
⅓ cup Coconut Oil or Butter, melted
2 Tbsp Honey
¼ tsp Salt
¾ tsp Baking Powder


Blend together eggs, butter, honey and salt. Combine coconut flour with baking powder and whisk thoroughly into batter until there are no lumps. Pour into greased 9x5x3 inch or smaller loaf pan and bake at 175C (350F) for 30 to 35 minutes.

If it springs back with a gentle press in the center, it is done.

Remove from pan and cool on rack.
