Covered and Smothered Corn Dogs

Chili cheese dogs in a casserole. Just bake corn bread with hot dogs, then top with a can of chili and shredded cheese.
Ingredients
- 2 packages corn muffin mix
- 1 package hot dogs
- 1 can chili
- 1 package shredded cheddar cheese
- 1 tbsp shortening

Method
Place shortening in a small rectangular baking dish and place in hot oven. Mix muffin mix according to package directions. Remove pan from oven, and pour muffin mix into baking dish. Place hot dogs in mixture and push down to cover, then bake according to directions on box. Remove from oven when when well browned. Slice width-wise, separating each hot dog. Remove each corn dog and place on a plate, then pour hot chili over dogs and cover with shredded cheese.
Notes: Shortening should be very hot when batter is added. To make a less crumbly coating, prepare a yellow cake mix, reserving about 1/3 cup batter. Add cake batter to corn muffin mix and bake.
